Preheat oven to 400. Melt some olive oil in a cast iron skillet on medium-high heat. Let the pan warm up for
2- 3 minutes until it’s very hot. Sprinkle fish with sea salt and pepper. Place face down (salmon skin side up)
and shake the pan briefly so the fish doesn’t stick.
Let cook for 2 minutes. Flip fish, then place skillet in the oven for 6 minutes.
