Roasted Veggies + Vodka Cream Sauce

Notes: optional to add cooked turkey bacon on top!

Ingredients 

  • 2 36 oz cans whole tomatoes
  • 8 cloves garlic
  • 4 tablespoons vodka
  • ½ cup heavy cream whole milk or coconut milk
  • 4-5 tablespoons fresh chopped herbs
  • 4-5 tablespoons butter ghee or olive oil
  • sprinkle of red hot pepper flakes
  • generous sprinkle of sea salt
  • 1 medium red pepper
  • 1 medium eggplant
  • 3 medium zucchini
  • 2 medium yellow squash

Instructions

  • Pulse tomatoes in a blender, making as chunky or thin as you like your sauce. In a large skillet over medium-low heat, add chopped garlic until lightly beginning to brown. Add herbs and tomatoes and reduce heat to simmer. Stir in the rest of ingredients, finishing with butter/ghee/olive oil.
