Roasted Veggies + Vodka Cream Sauce
Notes: optional to add cooked turkey bacon on top!
Ingredients
- 2 36 oz cans whole tomatoes
- 8 cloves garlic
- 4 tablespoons vodka
- ½ cup heavy cream whole milk or coconut milk
- 4-5 tablespoons fresh chopped herbs
- 4-5 tablespoons butter ghee or olive oil
- sprinkle of red hot pepper flakes
- generous sprinkle of sea salt
- 1 medium red pepper
- 1 medium eggplant
- 3 medium zucchini
- 2 medium yellow squash
Instructions
- Pulse tomatoes in a blender, making as chunky or thin as you like your sauce. In a large skillet over medium-low heat, add chopped garlic until lightly beginning to brown. Add herbs and tomatoes and reduce heat to simmer. Stir in the rest of ingredients, finishing with butter/ghee/olive oil.
