Molten Chocolate Olive-Oil Cake

Notes: Serve with fresh strawberries and chopped mint, sliced figs, coconut milk ice cream, ice cream or The Coconut Whipped Cream.

Ingredients 

  • cups almond flour or almond meal
  • 2 eggs
  • 1 cup sugar
  • cup olive oil
  • 6 tablespoons unsweetened cocoa powder
  • ½ cup boiling water
  • 2 teaspoons vanilla extract
  • ½ teaspoon baking soda
  • ¼ teaspoon sea salt

Instructions

  • Preheat oven to 325°F. Line a pie pan with parchment paper.
  • In a medium bowl, combine cocoa powder, sugar, vanilla, and boiling water. Whisk to combine. Then, add olive oil and eggs to the chocolate mixture, and whisk together. In a different bowl, combine almond flour, baking soda, and sea salt. Pour dry ingredients into the chocolate mixture, and stir well to make batter.
  • Pour batter into a parchment-lined pie pan and bake for 45 minutes for a gooey inside, or 50 minutes for a more cake-like texture.
