Molten Chocolate Olive-Oil Cake
Notes: Serve with fresh strawberries and chopped mint, sliced figs, coconut milk ice cream, ice cream or The Coconut Whipped Cream.
Ingredients
- 1½ cups almond flour or almond meal
- 2 eggs
- 1 cup sugar
- ⅔ cup olive oil
- 6 tablespoons unsweetened cocoa powder
- ½ cup boiling water
- 2 teaspoons vanilla extract
- ½ teaspoon baking soda
- ¼ teaspoon sea salt
Instructions
- Preheat oven to 325°F. Line a pie pan with parchment paper.
- In a medium bowl, combine cocoa powder, sugar, vanilla, and boiling water. Whisk to combine. Then, add olive oil and eggs to the chocolate mixture, and whisk together. In a different bowl, combine almond flour, baking soda, and sea salt. Pour dry ingredients into the chocolate mixture, and stir well to make batter.
- Pour batter into a parchment-lined pie pan and bake for 45 minutes for a gooey inside, or 50 minutes for a more cake-like texture.
