Grilled Shrimp, Pepper & Pineapple Skewers

Notes: a great make-ahead dinner you can just pop on the grill-- it cooks so quickly! If you don't have pineapple available, you can use apricots or peaches too. And add in as many extra veggies as you want. I love pairing these with a side of rice, roasted potatoes or grilled corn and a green salad.

Ingredients 

For the skewers:

  • 1 lb wild shrimp, peeled & deveined
  • 1 cup diced fresh pineapple cubes
  • 2 bell peppers, cut into flat wedges
  • 1/2 red onion, cut into wedges

For the marinade

  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika or smoked paprika
  • 1 tsp sea salt & 1/2 tsp pepper

For the pineapple salsa on top (optional)

  • 1 cup diced pineapple chopped more finely
  • 1/2 cup diced bell pepper
  • 1/4 cup diced red onion
  • 2 tbsp cilantro, finely chopped
  • 1 tbsp lime juice approx 1 lime
  • 1 tsp sea salt & 1/2 tsp pepper

Instructions

  • In a small bowl, combine marinade ingredients. Preheat grill to medium-high heat.
  • Skewer the shrimp, pineapple, onion and bell pepper pieces. Brush with the marinade and place on grill to cook for 4 minutes per side or until the shrimp are cooked through and opaque.
  • Combine all the pineapple salsa ingredients in a mixing bowl. Spoon mixture over the top of the skewers to serve. Optional to add extra lime juice and extra chopped cilantro for a garnish.
