Notes: a great make-ahead dinner you can just pop on the grill-- it cooks so quickly! If you don't have pineapple available, you can use apricots or peaches too. And add in as many extra veggies as you want. I love pairing these with a side of rice, roasted potatoes or grilled corn and a green salad.
In a small bowl, combine marinade ingredients. Preheat grill to medium-high heat.
Skewer the shrimp, pineapple, onion and bell pepper pieces. Brush with the marinade and place on grill to cook for 4 minutes per side or until the shrimp are cooked through and opaque.
Combine all the pineapple salsa ingredients in a mixing bowl. Spoon mixture over the top of the skewers to serve. Optional to add extra lime juice and extra chopped cilantro for a garnish.
