Grilled Shrimp, Pepper & Pineapple Skewers

Notes: a great make-ahead dinner you can just pop on the grill– it cooks so quickly! If you don't have pineapple available, you can use apricots or peaches too. And add in as many extra veggies as you want. I love pairing these with a side of rice, roasted potatoes or grilled corn and a green salad.

Ingredients 

For the skewers:

  • 1 lb wild shrimp, peeled & deveined
  • 1 cup diced fresh pineapple cubes
  • 2 bell peppers, cut into flat wedges
  • 1/2 red onion, cut into wedges

For the marinade

  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika or smoked paprika
  • 1 tsp sea salt & 1/2 tsp pepper

For the pineapple salsa on top (optional)

  • 1 cup diced pineapple chopped more finely
  • 1/2 cup diced bell pepper
  • 1/4 cup diced red onion
  • 2 tbsp cilantro, finely chopped
  • 1 tbsp lime juice approx 1 lime
  • 1 tsp sea salt & 1/2 tsp pepper

Instructions

  • In a small bowl, combine marinade ingredients. Preheat grill to medium-high heat.
  • Skewer the shrimp, pineapple, onion and bell pepper pieces. Brush with the marinade and place on grill to cook for 4 minutes per side or until the shrimp are cooked through and opaque.
  • Combine all the pineapple salsa ingredients in a mixing bowl. Spoon mixture over the top of the skewers to serve. Optional to add extra lime juice and extra chopped cilantro for a garnish.
