Split Pea & Potato Soup (Freezer Meal)

Ingredients 

  • 2 cups dried split peas
  • 2 medium potatoes chopped into cubes
  • 10 stalks celery chopped
  • 6 medium carrots chopped
  • 1 tbsp italian seasoning
  • 2 teaspoons each sea salt and pepper
  • 1 carton/4 cups organic vegetable broth or chicken stock

Instructions

  • Add all ingredients to a freezer bag. Label & store for later. When ready to cook, take bag out of freezer in the morning and dump into a crockpot and cook according to normal directions. If using a instantpot, let defrost in the fridge until ready to cook, and set to bean setting (or 30 mins on high pressure).
