Notes: This is one of my favorite dinner recipes. If you don’t want to use chia seeds, you can use an egg instead, although you will get a slightly different, and less crunchy texture. If you are using ground turkey, I think the dark meat tastes best in this recipe! Feel free to add in other shredded veggies if you’d like too. Serve with extra tomato sauce, mustard, or clean ketchup.

Ingredients
1½poundsorganic ground turkey or ground grass fed beef
½cupalmond flourgarbanzo bean flour or brown rice flour
2tablespoonsassorted chopped herbs: parsleyparsley, mint, thyme and basil would all work great
¼medium onion or ½ small onionroughly chopped
1clovegarlicchopped
½cuptomato sauce
1tablespoonchia seeds
1tablespoonred-wine vinegar
2teaspoonsdijon mustard
½teaspoonsea salt
½teaspoonpepper
Instructions
Preheat oven to 400°F. Spray a pie pan or loaf pan with olive oil or coconut oil. Add all ingredients in a mixing bowl and stir well to combine. Let sit for 5 minutes so the chia seeds can expand. Pour the mixture into the pan and distribute it evenly with the back of a spoon. Bake for 40-45 minutes until the meat is cooked through. Drain off any excess liquid before serving.
