Minestone Soup (Freezer Meal)

Ingredients 

  • 1 64 oz can crushed tomatoes
  • 6 medium carrots chopped
  • 8 stalks celery chopped
  • 2 medium summer squash or zucchini
  • 1/2 medium fennel bulb (or you can use all of it if not making another recipe today)
  • 1 tbsp italian seasoning
  • 2 teaspoons each: sea salt and pepper
  • 1 carton/4 cups organic chicken or vegetable broth (add only when ready to cook)
  • 1 box pasta (I like lentil or chickpea pasta best here)

Instructions

  • Add add ingredients (except the broth) to a freezer bag, adding tomato sauce last and spices. Seal bag well, label it and add a note on the label to add 1 carton broth to the mixture when ready to cook it in a crockpot/instantpot.
  • When ready to cook: pull bag out of freezer the night before or morning of. If using a crockpot, add frozen contents of bag and 1 carton broth and set to normal.
    If using a instanpot, pull bag out of freezer the night before or morning of and keep in fridge until ready (or on counter if it won't be long until you cook). Pour bag in, add carton of broth, and set to 20 mins, high pressure.
