Banana Macadamia Nut + Pineapple Cookies

Ingredients 

  • 1 banana mashed
  • ¼ cup flax seeds
  • ½ cup chopped macadamia nuts walnuts or slivered almonds
  • ½ cup coconut oil melted
  • ½ cup maple syrup
  • 2 cups almond flour
  • 1 ½ cups unsweetened coconut flakes
  • 2 tablespoons pineapple juice
  • ½ teaspoon cinnamon
  • sprinkle of sea salt

Instructions

  • Preheat oven to 350. Line a baking sheet with parchment paper. Combine all ingredients in a bowl and mix well. Using a small ice cream scoop, scoop cookie balls onto baking sheet. Press down in the center of each cookie to flatten slightly. Bake for 15 minutes, or until golden on the edges.
