Baked Cinnamon Oatmeal

Notes: such a great and quick one-pan breakfast that's easy to make for the week ahead. I used apples and cinnamon here, but berries, pears or raisins would all work great too. Optional to add chopped pecans or walnuts too. Bake in a square 8x8 baking dish or a round pie pan. Heat and serve warm.

Ingredients 

  • 21/2 cups oats
  • 1 cup applesauce
  • 2 eggs
  • 1/4 cup olive oil
  • 2 tsp flaxseed meal
  • 1/2 apple chopped
  • 2 tsp cinnamon
  • 2 tsp vanilla
  • 1 tsp baking powder
  • 1 tbsp raisins (optional)

Instructions

  • Preheat oven to 375. Line a square baking dish or pie pan with parchment paper.
  • Mix all ingredients together. Pour batter into pan and bake for 25 minutes until done. Slice and serve warm.
