Notes: these mini peanut butter cookies are so cute, and so delicious. And only 3 ingredients! I love making them with my kids. You can also use almond butter or sunflower butter instead of peanut. Mini chocolate chips optional!
Preheat oven to 350 and line a baking sheet with parchment paper.
Mix all ingredients together in a bowl until well combined. Scoop out small teaspoon sized balls and flatten gently with your hands (batter will be a little sticky).
Bake for 10-12 minutes. Remove and press a fork in a criss-cross pattern over the top while cookies are still hot (if desired).
Store in a airtight container on the counter for up to 3 days.
