I don’t really get the idea of giving babies sugar on their first birthday (if they haven't had it yet). Like, why? “Tradition”? Who cares. It really didn’t resonate with me. They probably have years ahead of it, so why not protect their sweet bodies a while longer? Plus, that didn’t have to mean NO cake-- it just meant I wanted to do an upgraded one with all real foods and no added sugar. I wanted a no sugar birthday cake that still tasted amazing, and also one that didn’t have any nuts, grains, etc. because I hadn’t introduced those yet, and this cake was born. Over the course of 2 days Noah ate the entire thing and I’ve never seen him happier. The memory of it is something I’ll forever treasure, and I hope it’s one you will be able to as well! Note on serving after 3 kids: After I bake these bigger 8 inch cakes, I used a cup to cut out 3 small circles and stacked them for a tiny layered cake. Icing wise, you can make homemade whipped cream without the sugar, or greek yogurt (and store in fridge until ready to serve) or just leave plain without icing.
