Apple Cinnamon Buckwheat Scones
Notes: Such a delicious fall breakfast or snack, and one that you can feel great eating. Naturally gluten-free and with the addition of buckwheat flour that lends a nutty taste, these no-sugar added baked goods are sure to be a hit! We love them warmed up with nut butter on top in our house.
Ingredients
- 1 medium apple, chopped
- 1 1/2 ripe bananas, mashed
- 1/4 cup buckwheat flour, plus 2 tbsp
- 3/4 cup almond meal (or garbanzo bean flour or oat flour)
- 1/2 cup shredded coconut flakes
- 2 medium eggs
- 2 tbsp olive oil
- 1/2 tsp baking soda
Instructions
- Preheat oven to 375 and line a baking sheet with parchment paper.
- Mix all ingredients well into a batter, starting with the banana first. Scoop batter out into medium sized balls with your hands form into triangle scone shapes on the baking sheet.
- Bake for 25 minutes until tops turn golden brown.
