Baked Cinnamon Oatmeal
Notes: such a great and quick one-pan breakfast that's easy to make for the week ahead. I used apples and cinnamon here, but berries, pears or raisins would all work great too. Optional to add chopped pecans or walnuts too. Bake in a square 8×8 baking dish or a round pie pan. Heat and serve warm.
Ingredients
- 21/2 cups oats
- 1 cup applesauce
- 2 eggs
- 1/4 cup olive oil
- 2 tsp flaxseed meal
- 1/2 apple chopped
- 2 tsp cinnamon
- 2 tsp vanilla
- 1 tsp baking powder
- 1 tbsp raisins (optional)
Instructions
- Preheat oven to 375. Line a square baking dish or pie pan with parchment paper.
- Mix all ingredients together. Pour batter into pan and bake for 25 minutes until done. Slice and serve warm.
