Pour juice and honey into a small saucepan over medium-low heat. Stir until honey starts to dissolve.
Sprinkle gelatin over the juice mixture, whisking and heating as you go until most of the clumps have dissolved.
Pour mixture into a square 8x8 pan or pie plate (if doing squares or cookie cut-outs) or use a dropper if adding into silicone gummy molds.
Place in fridge for 30 minutes until mixture has solidified. Cut into shapes or squares. Keep stored in the fridge for up to a week.
