Lemon Poppyseed/Black Sesame Seed Loaf

Notes: this is just soooo good. Think like banana bread (great served warm with nut butter on top), but with the perfect amount of brightness from the lemon. I used black sesame seeds because I was out of poppyseeds, and I kinda love it more! But you can choose. With only 1/2 cup of maple syrup as the sweetener, this loaf is all real-food based, for a treat you can truly feel great about eating any time of day 🙂

Servings 1 loaf

Ingredients 

  • 4 cups almond flour
  • 1 tsp baking soda
  • 3 eggs
  • 3/4 cup coconut milk from the can
  • 1/2 cup maple syrup
  • 1 banana, mashed
  • 1 lemon, zested & then juiced
  • 2 tbsp black sesame seeds or poppyseeds

Instructions

  • Preheat oven to 350 and line a glass loaf pan with parchment paper.
  • Mix together all dry ingredients on one bowl, and wet ones in another (included the mashed banana). Add the dry to the wet, stirring as you go until it's all incorporated together.
  • Pour batter into loaf pan and bake for 55-60 minutes or until golden brown on top.
