Ground Turkey, Squash & Broccoli Bake

Notes: this is such a great easy weeknight dinner- packed with protein, veggies and everything you need for a well rounded meal. I like to make this with half ground turkey and half grass fed ground beef, and for the veggies I like using broccoli, peppers and/or zucchini. The squash (delicata, cubed butternut, etc) can be substituted with sweet potatoes too. And cheese– leave it out completely, or use parmseasn as written, or pecorino or mozzarella would work great too.

Ingredients 

  • 1 lb organic ground turkey
  • 1 lb organic grass fed ground beef
  • 2 bell peppers chopped small
  • 1 head broccoli or 1 medium zucchini chopped small
  • 1 large or 2 small sweet potato, delicata squash or 2 cups cubed butternut squash seeds removed and cut into bite sized pieces
  • 1 1/2 tsp italian seasoning or dried rosemary
  • 1 1/2 tsp garlic powder
  • 1 sea salt
  • 1/2 tsp pepper
  • 1/3 to 2/3 cup parmesan cheese optional

Instructions

  • Preheat oven to 400 and line a large rectangular baking dish with parchment paper. Add squash/sweet potatoes, drizzle with olive oil and sprinkle with sea salt and pepper. Roast for 20-25 minutes until done.
  • In the meantime, cook the meat and veggies stovetop. Bring a cast iron skillet over medium heat, add olive oil and add veggies to cook first. Cook until golden brown. Add meat next (you can remove veggies from pan first if you need more room, or leave them in).
  • Saute meat, breaking up as you go until cooked through. Add italian seasoning or rosemary, garlic powder, sea salt and pepper. Add ground meat & veggie mixture to the baking dish with squash and toss to combine.
  • Grate cheese over the top, cover with foil and bake for 10 minutes until cheese melts. Serve hot.
