Baked Beef Meatballs In Tomato Sauce
Notes: I love making a big batch of these for the week (I double this recipe), because they are so versatile (over pasta, over roasted veggies, with polenta, etc). These meatballs bake in the oven covered with tomato sauce (and cheese if you'd like). I like to throw in some broccoli florets too for a true one-pan meal.
Ingredients
- 1 lb grass fed ground beef
- 1 egg
- 2 cloves garlic
- 2 tsp dried basil
- 2 tsp dried parsley
- 1 tsp dried oregano
- 1/2 tsp thyme
- 1/4 cup sundried tomatoes optional but adds some great extra flavor
- 1 1/2 tsp sea salt and 1/4 tsp pepper
- 2 large jars tomato sauce (like Raos)
- 1 cup mozzarella cheese (shredded) (optional)
Instructions
- Preheat oven to 450. Grease a 8×11 shallow baking pan with butter or olive oil.
- In a large mixing bowl, add all ingredients except tomato sauce & mozzarella cheese. Mix well to combine.
- Form meat mixture into 1 1/2 inch meatballs. Place in baking dish, leaving some room in between. Bake for 15 minutes, then rotate.
- Remove pan from oven, and pour tomato sauce all over the meatballs. Sprinkle cheese, if using. Cover pan and bake for 25 minutes more.
