Chocolate Chia Seed Pudding
Notes: a perfect filling snack, dessert…. or even breakfast! It's packed with healthy fats and protein to keep you full, this one is such a great one to make-ahead for busy weeks. Optional to add in other additions like shredded coconut flakes, cocoa nibs, berries or even some ground coffee if you like. Best when made 30 minutes ahead of time, minimum. Store in the fridge in a sealed containers.
Ingredients
- 1 can coconut milk
- 1/4 cup chia seeds, plus 2 extra tablespoons
- 2 tbsp maple syrup
- 1/3 cup cocoa powder or less for less intense chocolate taste
- 1 tsp vanilla
Instructions
- Add all ingredients to a mixing bowl and whisk well to break apart all the coconut milk clumps. Pour into jars (as big or small as you prefer for servings). Let sit for 30 minutes in the fridge as it firms up (or up to 7 days to store, in a sealed jar).
